For August we are offering a delicious and tasty Duck Breast Special every weekend of the month with the preparations changing each week. For those experienced in eating duck, the breast is where most of the meat is found. Cooked properly, duck is tender with limited amounts of fat. Since we know how to do it at the Pinnacle, you will find all these preparations to your liking. While the preparations vary from week to week, the price remains at $25 for any of them. For August 2-4: Anise Spiked and Seared Duck Breast Sliced and Served with Baby Spinach tossed with a Spicy Cantaloupe Dressing, Hearts of Palm, Mandarin Oranges, Grapefruit and Cherry Tomatoes; August 9-11: Blackened Duck Breast Served with Mango Cilantro Rice, Grilled Broccolini and a Scallion Aioli; August 16-18: Marinated and Charbroiled Duck Breast served with Sun-Dried Tomato and Basil Risotto and Drizzled with a Balsamic Grape Reduction; August 23-25: Seasoned and Pan Roasted Duck Breast served with Goat Cheese Mashed Potatoes, Grilled Asparagus and a Roasted Garlic Cream Sauce; and August 30-September 1: Ancho Chili Rubbed and Grilled Duck Breast Served with Mixed Baby Greens Tossed with Tamarind Dressing with Grilled Pineapple, Roasted Red Bell Peppers, Jicama and Cilantro.
